We smoked a 9 lb. pork butt for my brother in law, kids, grand kids, and son's significant other. 225* most of the time, 250* for the last 3 hrs., and took 18 hrs. That was the most stubborn pig I've done to date. Usually 1.25-1.5 hrs per lb. I allowed plenty of time before we planned to eat and still was able to FTC for a couple hrs while we visited and caught up on family. It came out of the cooler piping hot.
I set the pulled pork out dry with plenty of bark from a homemade rub (learned how to pack it on from Tom). Then I put out choices of sauce--Smokin Okie's Pulled Pork Baste & Serving Sauce, Fitz777 Easy Basic Sauce, Memphis Barbecue Sauce, Bullseye, and Cookshack Spicy Barbecue Sauce. My wife made some of her homemade cole slaw (delicious) so a couple of us could Carolina it up a little. Brought out some of Todd's Smoked Baked Beans (hmm, hmm) and Safeway Macaroni & Cheese. Sounds like a meal from the International Market Place.
The meal went over very well with everyone doing their thing with the sauces. Pulled pork was great. Many compliments from the masses with seconds and thirds stuffing us all. My daughter brags about pulled pork from a Q place in town. Say, "it's the best." Told everyone, nothing compares with Dad's pulled pork.
Thanks to everyone on the forum for helping me put this dinner together and input in general. It was tasty and fun.
