I agree with all of the above too.
When I seasoned mine the first time, I cleaned it with simple green and let it dry, then wiped the walls and racks with bacon grease, fired it up @ 250 for a couple hours and prepped a couple butts while waiting.
Put the butts on, stuck the probe in the smallest one, set for 185 @ 224 and went fishin'.
