I use (2) AcruRite thermometers ( got a Lowes ) when I cook. I have noticed with the Cookshack that in the early stages of any cook the thermometers will not register a temperature......they only say HIGH. Later in the cook they will display the Temp. Is it the type of smoker ( steam ) or the brand of thermometer that causes this ? I did not have this problem when smoking with my propane/water smoker. Just looking for answers.

I use a good old fashioned $10 candy thermometer with a 400 degree F max temp. Has always served me well with the help of a cork to put it through the middle of!

I agree with the others, obviously you're not aware of the CS line, but having to open the door wastes heat and increases cooking time.

I'd suggest a remote probe thermometer and run the wire up through the vent.
