Looking for an opinion...did a breast yesterday, about 6 lbs. brined in smokin okie's for 12 hours. I don't think it got fully thawed before I put it in the brine. I put it in cold water for 3-4 hours, from frozen, and THOUGHT it was thawed. I smoked it at 250 for about 6 hours, and it only got to about 140. I then foiled it and put it on the grill with indirect heat and took it to 165. The question I have, is do you think there are any issues with the safety, or should I toss it? Thanks in advance for any input.
