You could still take the route you were headed...it'll just dilute the flavor some.

If you place the bird and brine into a large plastic baking bag, you shouldn't need 2 gal. You can squeeze all of the air out and the bird will be completely submerged. Also, place it in a large pot/pan in the fridge to avoid a messy leak.
You can adjust the amount of brine you need up or down, but the ratio needs to stay the same.

Not sure why your brine is more than the bird. Salt, sugar, spices to 2 gallons of water? Now if you're adding a 1/2 gallon of Jack, I'd skip the brine and drink the jack Big Grin

One trick is I buy the brine ingredients in bulk (I do brine a lot) and can get 20lbs of salt/sugar a lot cheaper at Sam's than a grocery store.
