Fixin to do my first brisket. I've done a search but can't find any info whether brisket flats are cooked fat side up or fat side down. Pictures show fat down but would'nt they stay juicier fat side up?
If you are cooking only one, cook it fat side up. If you are doing multiples, they should all be fat side up except if the botom one is directly over the firebox. If so, place it fat side down.
