6.25lb choice brisket flat that I bought at Costco's for $2.49lb. Used approximately 3oz of Apple wood (quickly becoming my favorite wood). 8 hours at 250 degrees, to 190 internal, wrapped in foil for 1 hour. Charred quickly on the grill. My best flat yet in the Smokette. I may be getting this thing down, finally. Has taken some practice. Was very happy with the quality and price from Costco, plus they had several to choose from. Oh yea, rubbed with Head Country seasoning that I bought from Paul Schatte in Ponca City. I love this stuff. Best of luck everybody!
