I'm deep in a butt smoking extravaganza as a new cookshack owner trying to get the elite good and funky. Anyway, I've got more meat than I can eat or freeze so I'm inventing ways to use it.

I made this up yesterday and it was delicious---a great way to use that leftover smoked butt.



BROWN RICE WITH LENTILS AND SMOKED PORK

2 cups brown rice (I like bulk brown basmati from Whole Foods)
1/2 cup dry lentils
4 cups chicken stock
1 onion, chopped
4 heaping tsp chopped garlic
4 Tbs butter
Chopped fresh hot peppers (I used fresh cayenne from my garden)
About 3/4 pound pulled smoked pork (or whatever you have)
A little oil
1 tsp kosher salt
Ground Black Pepper


Heat oven to 375

Put stock and butter in a bowl and microwave for 5 minutes

While that’s microwaving, heat oil in bottom of oven-proof dutch oven

Add rice to oil and stir occasionally until starting to brown

Add onion, garlic, salt, pepper, pork, lentils and stir around a little

Pour in hot stock/butter and stir up a little

Cover with lid and cook in oven for about 45 minutes

Take a look and stir, cook about 10 min more

Remove and let sit, covered for 30 min
