I've read some stuff on portioning meats. But I'd appreciate an expert's opinion, just to be sure.

Will two 10lb, bone-in butts serve 40 people(maybe 34 adults and six kids) for a pulled pork sandwich buffet where it's the only meat? Would I be better off doing three 8 pounders? I'd really hate to come up short.

But I'm sure you cook up some great stuff so they won't want anything else.

Without sides and nothing else, they'll want to eat more.

Think of it like this. 20 lbs will cook down to 10 lbs. 40 people / 10 lbs is 1/4 pound per person. 4 oz isn't a lot to feed an adult without sides.
Smoke some bush's baked beans, they're cheap to purchase. Drain the (BIG) cans of the liquid, add onion, garlic, Lee and Parrins(sp?) and some of your favorite BBQ sauce and some yellow mustard. Smoke for several hours (I use my off-set for this) and stir the beans about every 45 minutes. If you don't want to make your own get some KFC Coleslaw. Here's a link with the recipe.

You can also make a nice HEALTHY cool pasta salad.

1 1/2 packages of spiral pasta
1 26 oz jar Newman's Own� Pasta Souce (any variety, we suggest Tomato, Peppers & Spices)
1/2 cup Newman's Own� Olive Oil & Vinegar Salad Dressing
2 1/2 cups broccoli florets
1 cup diced carrots
1 cup frozen peas (defrosted)
1 cup sliced ripe olives
1/2 cup scallions

Cook pasta according to package direction. Mix pasta, broccoli, carrots, green peppers, peas, onions and olives in a large salad bowl. Add Newman's Own� Pasta Sauce and Salad Dressing, toss and refrigerate for at least 3 hours. Serve at room temperature.
