IMHO you won't get a great flavor change in the bark when doing long cooks.Salt or heat or burned will be the biggest changes .

It seems if you add something really offensive,that will usually stand out.

Now mixing in a little rub, as you pull the butt, and finding a sauce that compliments the pork is where you will find your taste differences.
