I am about to put in a butt. I have had rub and mustard on it for 24 hrs. Putting it in at 10 tonight. Will it be ready for 6 tomorrow night? 225 for 12 hours (till 10 tomorrow morning) then 185 till 6 pm?
I like to put butts on at 10:00pm and at a temp of 200deg. The next morning they'll just be getting onto the plateau. I just let 'em go until the temp starts to move up usually between 10:00am and 12:00pm. I then crank the temp up to 225 and they'll be done about 3:00pm. Double wrap with foil, wrap with several heavy towels and stash in a dry cooler. At dinner time they'll still be too hot to handle.
No problem on the wood deck, jut put a drip pan under the drain hole or mama will have your hide. I know from experience. Let us know how it turned out.
I smoke my butts at 225d .Never mess with the dial ever.Alway good timing and almost predictable give or take an hour at best. Same temp means I can learn my times with dif pork butts [dif wieghts].Eat your mistakes!Have fun.
