I like to put butts on at 10:00pm and at a temp of 200deg. The next morning they'll just be getting onto the plateau. I just let 'em go until the temp starts to move up usually between 10:00am and 12:00pm. I then crank the temp up to 225 and they'll be done about 3:00pm. Double wrap with foil, wrap with several heavy towels and stash in a dry cooler. At dinner time they'll still be too hot to handle.
