- 3/4 cup kosher salt
- 3/4 cup sugar
- 10 garlic cloves
- 10 cups water
- 2 Tbsp. peppercorns,freshly crushed
- 3 or 4 bay leaves
- 1 Tbsp. ground cinnamon

Bring to a boil to dissolve salt and sugar.
Chill well and brine over night.
Use less salt in your rub if you brine.
