We sell pork that we've pulled and frozen in small bags. If I tell them to keep it frozen and use it within 3 months, that sounds pretty safe. Most of them are out within a week. They really enjoy having a dinner within easy reach.

When I have frozen left over that I don't sell, I use it for Brunswick stew, freeze the stew in a bag that fits inside a 1/2 pan. I can put it frozen in the pan to warm, or thaw it first. I usually use the stew within a month of freezing.
