Derek:

You will be just fine.

Since we received a whole 18# Greenberg Smoked turkey as a gift, I bought the same breast you bought, plus am doing a ham.

I have done the breast 5 or 6 times in the past, brined, rubbed with butter and dry rub and smoked and it comes out great.

Probe it and don't over cook it!!
Why buy a turkey breast? I was most disappointed when I tried a turkey breast last week. The flavor is not as good as a whole turkey (at least for me). The thighs of a whole turkey are very tasty and you don't have them with the breast. (I understand why the legs are harder to carve etc.)
The real disappointment is whenyou carve the white meat off the breast and see how much carcass you purchased. I bought a 6 lb breast for about $19+. I could have had a whole turkey for that and maybe close to the same white meat. A turkey breast has to be one of the worst buys in meat. IMHO
And that's another testament. I bought a 20 lb bird for just the breast, it was 1/2 the price of the regular breast AND I have the dark meat.

This year, I'm spatcocking the bird for a little test, want to continue seeing some things.

Oh, and with the bones from the whole smoked bird, I make my stock. A breast doesn't give much with it's leftovers.

But I'll never say I'm not a Breast Man.
I don't know where you guys are buying your turkey breasts. I don't deny that the breast is more expensive/lb than a whole turkey, but I get my 6 lb breasts at around $10.

I'm the only one in the family that likes dark meat, so when we're interested in just turkey sandwiches and not the full blown dinner, we get the breast. Makes it easy. Also, a lot cheaper and tastier than buying turkey meat from the deli department.
