Smokin's brine solution calls for Tenderquick as an optional ingredient. I have not been able to find the Tenderquick product at any of the local grocery stores (including Wall Mart) here in Olympia, WA. Is there another product I could substitute for the Tenderquick ??
Also wondering just how important the TQ is? I have used Smokin's brine several times now for turkeys, pork loins, & chickens with good results so far - nobody has gotten sick yet and food has been great.
