Still trying to decide which smoker(s) I need. Did some quick comparisons and found the following information:

Southern Pride's sc-100 and sc-200 cost roughly $2500 and $4000, respectively, and hold 35 lbs and 70 lbs of ribs, respectively.

Cookshack's comparable models, the 70 series and 100 series, cost approximately the same but only hold 15 lbs and 30 lbs of ribs, respectively.

Why is this? Are the Cookshacks so superior in quality that it's worth giving up half of the capacity? These figures are taken directly from the official specification sheets of all models, so I'm pretty sure they're right. Can anybody shed some light on this? From what I've heard the customer service and support is better with Cookshack; I just want to make sure I'm getting my money's worth product-wise.

You might try posting this inquiry in the Professional forum. Most of us on these pages are backyard barbecuers who aren't familiar with these models.

Have you talked with the CS folks yet? I continue to be amazed at how much they know about their product, the competition, and barbecuing in general. I understand from several posts that they also are willing to talk with you about getting your restaurant started. That, and the favorable comments from all who use the CS products, should give you additional reasons to talk directly with them.
You might want to call CS instead and get some info, they can also talk more directly about other smokers, etc.

Not sure what you're using for comparison, but on the CS website for a 150, it says:

40 lb. (18kg) ribs per load, 80 lb.(36kg) heavy cuts per load, 15 chickens per load

You also need to think about usage and if one smoker is enough. What do you plan to smoke in it as well as quantities. For example are you doing ribs and chicken, then the figures can't be combined. You have to look at shelves and the capacity of the individual shelves. In my 150, I can put in two rib racks and smoke 10 to 12 racks if I need to and still have shelves left for other stuff.

That's why it's good to call Sales, they can help you answer any questions.
