Make sure you "season" it per the directions.

Are you sure it's a Shoulder? It's pretty difficult to find them outside of the Carolina's (I can't even get a butcher here to understand).

Traditional Carolina people will leave the skin on, so to see if there is a difference, do one like Tom suggest and one with the skin on and see what you think.

If you're planning on having a party (you ARE aren't you with that much meat) give yourself lots of time, it will take a while for those big guys to be done.

I don't suppose any of you could suggest places where I mind find pork butts in New England. I've looked and looked, and I can't find them anywhere...although picnic cut pork shoulders are available everywhere! I've even been looking for "country style ribs" as a possible indication that they have butts out back, but I haven't seen those either. I've tried my one local butcher, the grocery store chains, and Walmart without success. Any other ideas?
Please forgive the tangent for those of you outside this area, but I actually work in Nashua, and I'm wondering what butchers you're talking about. Mike's is long gone, if that's one of the ones you're thinking of, and I don't know of any others. If you do, I'd like to hear about it. And you're right about Chelmsford not being too far away. Where is this butcher shop in Chelmsford (if I'm coming down Rt. 3)? Thanks.
