I found the recipe on food52 and it is simple, quick and fantastic.
1-1.5lb pork tenderloin
marinade
3 Tbsp fish sauce
2 Tbsp maple syrup
1 Tbsp brown sugar
2 Tbsp soy sauce
1/2 tsp sesame oil
2 garlic cloves minced
1 slice ginger minced
1 gr onion
1/2 tsp black pepper
2 Tbsp veg. oil
cut tenderloin in 1/2 in rounds and flatten to 1/4 in. combine marinade and pork in plastic bag and marinate for about 30 minutes.
1 loaf french bread slice length wise and mayo both sides or mayo on one and pate on the other
red leaf lettuce
sliced jalapeno or pickled jalapeno
cilantro
pickled carrot and radishes
1/4 lb baby carrots and 1 bunch red radishes julienned.
1/2 cup water
1 cup apple cider vinegar
1 Tbsp salt
2 Tbsp sugar
mix all ingredients until salt and sugar are dislolved add carrots and radish and let set at least an hour or overnight.
remove pork from marinade & grill pork for about 2 minutes per side. don't overcook as they are thin.
assemble sandwich- bread, lettuce, pork then top with remaining ingredients. i placed long toothpicks to separate sandwich prior to slicing.
