We worked on the food for the catering job (50 people) until 2:30 AM last night. Got back up at 5 AM to get everything loaded. I forgot to put the six pork butts on the pit until midnight. This is another area where the FE comes in real handy. Cooked the butts at 275* until 6 AM. They were in the high 170's. Cranked it up to 325*. They were hitting 200* an hour later. Then I put on two sides of Salmon. They were ready in two hours. The only thing I wasn't happy with, were my beans. (10 pounds) They tasted great in the morning. I turned up the heat to get them hot. I got busy and all of a sudden I smelled something burning. About two inches on the bottom of the pan were fried. I drained out the remaining water. I salvaged them. Everyone liked them, but I was not happy. I could still smell the burnt beans, but they did not taste that way. Also had five pounds of potato salad, and thirteen pounds of cole slaw.
My wife made the banana pudding recipe from food tv. (Not Your Mamas Banana Pudding) It was to die for. (This was a free bee)
The guy was happy with the food. He gave me a $100.00 tip.
He has a large job next month for us.
These jobs are a lot of work, but I love to watch the people enjoy some real bbq.
