I'm doing my first baby backs and have 4 racks that I was planning on doing this evening and have already put the rub on (salt and sugar) and was going to reheat them on the grill tomorrow at my parents.

Turns out they're coming here, so I could just as easily start them at 7 tomorrow morning and have them come right off the smoker.

I've read here, and in my own experience, that the salt and sugar will start to cure and adversely affect the pork after 2-3 hours and overnight will certainly mess up the ribs.

Any thoughts on if I can remove the rub with paper towels or even rinse with maybe apple juice or water?

Or should I just leave them overnight?
