Hi all!

Did my first butts on the Model 50 yesterday. Amazingly good. I had a cryo'd 16.79 lb two pack from Farmer John. I was in the mood for something different so I experimented with a much sweeter rub then I usually have done in the past:

2/3 cup brown sugar
1 tbs Mollasses
4-5 oz maple syrup (amount will vary I like my wet rubs to be a thick paste)
1 tsp Cayenne pepper.

I also injected a large amount of apple juice in each.

I tossed it in the CS at 225 with about 10 oz apple and took them to 200 and 196. When it came time to pull them, I couldn't even get them off the racks in one piece! I had to pull the racks and turn them over into a pan. Once in the pan they nearly pulled themselves, just fell apart and tasted wonderful.

The most interesting thing, was the bark. Incredible! I can't really explain it fully. A little sweet with a tiny bite and very firm and dry. Not sticky at all.

That sounds terrific, how long did it take to reach 196 and 200? Also, how much apple juice can you get by injecting?

Finally, the only chasin' tail around here was my Black Lab. I did ribs last night in my smokette. My wife forced me to smoke a bunch of large bones on the bottom rack, under the ribs. I might as well just give the smoker to them and go out for supper.

Bout 16 hours. I made the mistake of putting em in at noon so when the plateu (sp?) hit I took it up to 250 and cheated. It was too late to let them go all night unless I wanted to get up at the wee hours. As it was it was far to late at night hahah

As for the apple juice, I used about 12 oz between the two butts.
