All right! 300 degrees pre-heated in the Amerique is definitely the way for me to go with Whole Chicken. Today's 5.25 pound bird took just under two hours and it was terrific!

I did not brine as this was a Pilgrim's Roaster that comes already "enhanced" with 12% chicken broth, but I did loosen the skin over the breast with my finger, and shoved about a stick of compound butter inside to add flavor.

2.0 oz of Apple was my wood of choice today, and it had almost a sweet smell to it. Next time I will cut back to 1.0 oz as the skin was a little too smokey, but the flesh was great!
