I have been asked by a senior citizen group to smoke thighs and legs. I have not done chicken pieces on my FEC 100 yet. So I ask for advice. Suggested time and temp. Have got the rub already and they don't want sauce.
Higher temps work well, 275 to 325. Time's anywhere from 1 to 3 hours, depends on a few variables (size of chicken, temp of smoke if you open the door, etc).
You just need to make sure to have it clean, when you get higher temps, you want to make sure there's no grease pooled anywhere.
