Why not start them at 225* for an hour or so, then kick it up to 300* for the last 30-45 minutes. More smoke time. That's my next effort. If you experiment before me, let us know how it turns out. Just had them the other night at 225-250* and finished under the broiler, but I've got to see how the Elite works at the higher temp.

I smoke wings at 235 for 2 hours. These are the jumbo sized wings, not the little guys.

I put a nice coating of spice rub on about 4-5 hours before cooking.

After 2 hours I remove from smoker, then throw on the char-grill for 2-3 mins. on each side with a light slather of BBQ sauce.

Fall of the bone meat, with a nice crispy and spicy outside. It'll be the best wing you've ever had...
