i didnt think id be doing this anytime soon... but my girlfriend surprised me with a 009 for christmas. completely over the top, i was elated. i just happened to have a brisket flat rubbed down and ready for this new baby. i seasoned up the 009 in the morning and threw the flat in around noon. i didnt have a polder though and since it was christmas there were no stores open to get one. so, i went without and failed my first brisket. then i read in the forum that the flat is unforgiving and what not. so, undaunted, i did 3 racks of baby backs to perfection last night! i love this smoker and my girlfriend scored MAJOR points. sorry for the long post, im excited though.
