i just "burnt in" my new 50. there are streaks of tar running down the inside. do i clean the smoker every time i use it, or let it build up and do it now and again? what chemicals do i clean it with? i read that people change the foil in the smoker. i didn't realise you need put some in it. where and how much.

dundee: I usually use a plastic scraper after every couple of uses to get any excess grease off of the walls. You want to keep the smoker seasoned so unless it is really bas I wouldn't do a cleaning with cleaning chemicals.

As far as foil goes. I put foil on the bottom of the smoker with a hole punched in for the drain hole and over the wood box. The foil is changes after every cook and makes clean up easier
