Overconfidence is a dangerous thing. Feeling my oats after about 10 successes with my 008. Hey, I've got it all down now.

I just started a brisket at 11 pm. I got so hung up on cleaning up all the things that I used for prepping that I forgot to latch the door on the smoker! Luckily, I quickly figured that one out. At least it wasn't wide open.

I guess I might have to adjust the cook times a little, if I left the door ajar for the entire night!

Once I smoked a duck and 2 Cornish hens in my SM008 for 16 hours. I don't recall, but there may have been adult beverages involved in this event as well. The amazing thing was that when I took them out they were still pretty good. Very much falling off the bone but still moist.
