If you want to do you, you can use pellets or sawdust. The problem is the controller won't go that low. My old traeger I could get low enough.
I just use a hot plate since on cold smoking you only want enough heat to get it smoking.
I haven't tried my IQ in a while, so dont know how low it will go, just haven't needed to.

I did it once in the FEC i put a hot plate with a castiron skillet on it filled with crushed pellets and smoked away, I also ran a temp probe in the exhaust to the shelf the cheese was on just to make sure it didnt get to hot. Worked like a charm.
I make Deer Jerky in mine at 150*. Takes about 10 hrs and I watch it to keep it from getting too hot. A pan of ice helps keep the temp down.
