For those of you who wonder if a cookshack smoker is up for subzero use I can assure you not to worry. Last evening at 8:30PM I loaded 4 pork butts (36#) in my model 55, outside temp minus 16F. At 6:30AM this morning I pluged in the thermometer and the lower probe read 200 degrees. The upper probe read 190. I lowered the temp to 200 and headed into work. About 8:30 I came back home and wrapped the whole butts in foil and left them to cool. On Friday I am having a noon feed on Friday for our construciton crew. Roger
