Greetings all. Just ordered my new Model 50 and can't wait for the arrival. In anticipation of future great results, thought I'd take a minute to querty the gang and get an opinion on the cold smoke kit that CS offers. I note that CS offers a cold smoke kit for the model 70 and since the 70 series and the 50 series smme to be about the same size, I'm assuming that it could work with the 50. I'm kinda curious about peoples experience with the kit. Has anyone tried it ? What does it consist of ? What was your experience ? Any thoughts on how to get the most out of it ? Any info would be approciated !

As an aside, made some excellent salmon last week in an NB Smoker, the offset firebox model with the upright smoke chamber, ( believe it's called the Bandera). Essentially started out with a recipe for gravlox. Cured the Salmon for 3 days in a mix of salt, brown sugar and fresh basil. Once cured the salmon was rinsed and dried. Started a very small charcoal fire in the firebox and added a chunk of oak, since it was so cold outside the other week I was able to keep the temp of the smoker in the 60-70 F range, for the 3 hour time that I left the fish in the chamber. Results were excellent, silky smooth texture. Not exactly lox but a darn good approximation.

The problem with the baffle for the Smokette is that given the small size of that unit, it just didn't work real well.

I'll make sure Stuart gets the comments about Cold Smoking and Thermostats, but there is an option if you can't get the baffle.

Now, since I'm NOT working for CS I can say what I want, so, there's an alternative.

I call it the Cold Smoke Box. We've talked about it before and it's a pretty busy day, but I'll describe the details later when I get some time.

You might try a search for Cold Smoke. You'll get lots of replies, but work you way through them, there's lots of help in those posts.
