I use maple all the time, mostly silver maple. Others use oak. And almost any fruit tree, or grape vine, should be fine. If wood isn't available at all, it might even be possible to use corn cobs or nutshells.

Too, if you're using a Cookshack, you can get by with small prunings - no need to chop down a whole tree!
