The larger version has a special baffle that allows you to cold-smoke. I understand that the baffle will work on the smaller version, but with less success.

You can use the smaller version for a smoke box and put another box on top of it to avoid problems with higher temperatures.

Search the forum for cold smoke and you will find several threads where members discuss their successes and favorites. It doesn't sound like many who use the CS for cold smoking are disappointed.

I have a question regarding "Cold Smoking" in the model 50 series and the time limit restrictions on the "Cold Smoking Baffle".
How many times can the cycle of 20 minutes on followed by 1 hour off be repeated without potential damages to the unit?
I have read all I can find in the forums regarding "Cold Smoking" but I cannot find an answer for my question.

You can repeat the 20 minutes on followed by an hour off as many times as you want. However you will find that after 3 cycles you start to build up enough heat that it will bleed through the cold smoke baffle and it is difficult to keep the temperature under 100 degrees. If I want to cold smoke more than 2 cycles I normally take the food out of the smoker and let it cool for an hour or so with the door open.
