I received my 50 last week and have already tried it out on some ribs. Great results. I'm used to bbqing on an "offset bbq" with charcoal and wood and did appreciate the lack of attention the 50 provides.

Anyway, I'm most interested in cold smoking with my 50. The instructions with the cold baffle kit state that I must turn off the heating elements after 20 minutes, or risk damaging the heating elements. What's the best way to cold smoke for over 5 hours on the 50?

Why can't I just set the temperature to 100, with the cold baffle and let it go?

The thermostat senses temperature in the middle of the cabinet. With the cold smoke baffle in the smoker, you are holding the heat below the baffle. If you leave the unit on too long with the cold smoke baffle in place you can actually warp the bottom of the oven.

I think you will find that 1 hour to 2 hours is plenty of smoke time for cold smoking. Give it a try and let me know what you think.
