did pork butts for the first time. i started them at 12:45pm at 225 and cooked them to 195 degrees. i only probed one since they were close to the same size which is about 9lbs each. the probe didn't register at first and i thought it was broken but it was that it dosen't register temps lower than 32. as soon as it rose above that everything was fine. they both fit on the top rack which was cool. i seasoned them with rib rub mixed with turbinado sugar and cooked them for about 14.5 hours. i was going to cook them to 200-205 degrees but i thought they might get a little mushy. going to try ribs next.

I think the 225* mentioned was the temp of the smoker, not what he intended to take the internal to. Nothing wrong with taking them to 200* - 205*, been there and all is well. Much higher & you may get dry. And... If you do get dry, a little doctoring with sauce & rub will help but is not preferred.

Butt looks great! What, if anything, would you change in your next butt smoke?
