Thanks cookshack and the forum,I never would have tried this with my offset. My smokette ran nonstop for 5 days and never missed a beat. I vacuum sealed each brisket when it was ready,refrigerated until sunday,sliced it up, put in roaster pans, and said a prayer.It was great! we served up 77 plates and made the church a little extra money. It's funny how popular I have become since I started cooking with my cookshack. thanks again,Jeff
