All of my wife's family will be coming over for Thanksgiving and I want to smoke a Turkey, I have never smoked a turkey before however I have smoked several pork shoulder's. I have a Brinkman barrel smoker with the firebox on the side. Can you help.

1) How long does it take to smoke a raw thawed out 12 lb Turkey
2) What is the best kind of wood to use (Hickory)
3) When I am smoking the Turkey do I charcoal and wood and how long do I use the wood do I back off the wood in 4 or 5 hours and use charcoal to maintain my heat (is it possible to get to much smoke)
4) Will the fruit woods bitter your meat if you use to much
5) Do you place your water pan directly under you bird
6) Do you place the bird breast side up
7) Do you recommend pouring red wine in the water pan, if so what do you use.
8) What kind of dry rubs do you recommend for the bird

Absolutely, Positively, do NOT WAIT until then to do this. It's got disaster written all over it, especially with some of the basic questions you're asking about.

Turkey's are pretty cheap.

Try a practice turkey this weekend, or next, but never wait until a big event to try something new (let's just say I've seen it posted before and the results were not pretty)
