I had great luck in my model 55 with 1 1/2 slabs of ribs - cooked for about 3.5 hours at 225. If I do 3 slabs do I need to cook longer or is it about the same?
Bill, Cooked six slabs of spareribs, hung with the hooks in the model 55. The spareribs are larger than St. Louis cut ribs and it took 4 hours with three ounces of hickory. They were tender and had perfect smoke flavor.
