I had great luck in my model 55 with 1 1/2 slabs of ribs - cooked for about 3.5 hours at 225. If I do 3 slabs do I need to cook longer or is it about the same?

Cooked six slabs of spareribs, hung with the hooks in the model 55. The spareribs are larger than St. Louis cut ribs and it took 4 hours with three ounces of hickory. They were tender and had perfect smoke flavor.

The number of slabs won't markedly change the time.
In fact,you may find that the cooker cooks more consistently with less temp swings when fuller.

And along those lines, do you suggest hanging the slabs and if so which end up?
I don't hang mine,but there are two schools of thought.
Most think to hang them with the thick end up,so they don't break apart.
Others feel that the bigger end should go down, to even out the cooking near the heat.
I'll guess some of the hanging folks will give their own reasoning.
