i met a mgr of a lone star rest and he took me in the back to show me their cook shack 150. they were cooking prime rib and they had the vent corked off with a small hole drilled in the cork he told me they have been doing it like this for years and also he told me they never clean the inside of the smoker, he opened it up and i could tell it had never been cleaned, it had several inches of crust all over the inside he said it makes for a better flavor
