I'm not sure if this is correct section as Country Style ribs really aren't ribs at all. Regardless, they were on sale and had the bone so I thought I would give em a whirl. The package I picked out was right at 4lbs and contained 9 pices. Now, I usually braise or slow cook these but not this time.
I seasoned them liberally with Memphis Mae's rib rub and smoke cooked them @ 220 with 2 oz of cherry wood. I only kept them in the SM040 until they reached 110 to ipmart a little smoke, about an hour. Next I put them on my gas grill, indirect heat and painted them with CS spicy BBQ sauce, turning every 15 minutes or so. I continued this process until they reached 180 in one of the thickest pieces, pulled them from the grill and served them up hot and sticky.
The sauce gave these "ribs" a very nice glaze and combined with the smoke flaver they got for the first hour in the Cookshack they were great. They were very tender and juicy.

Total time from start to finish was just a bit over 2 hours. Next time I'll remeber to get some pictures.
