County fair smoked cinnamon almonds.
My s-i-l loves county fair cinnamon almonds. I thought I’d give them a try with just a hint of smoke.
I can’t stop eating them.
1 # raw almonds
1 egg white
2 tsp vanilla
2 tsp cinnamon
1/3 c dark brown sugar
1/3 c white granulated sugar
1 tsp salt
Beat egg white and vanilla with a whisk until foamy. Add the almonds to the egg white mixture and stir until thoroughly coated. Mix dry ingredients until well blended and sprinkle on top of almonds.
Stir until all are coated.
Preheat smokey (mine’s the smo45) to 275 degrees, without wood.
About 10 minutes before time to put almonds in smoker add 2 oz maple.
Layer the almonds on a frogmat or similar item and smoke for 1 hour.
After smoking you need to transfer nuts to a large bowl and stir A LOT to keep them from turning in to one huge almond lump.
Gives you a nice cinnamon-sugar flavored almond with just a hint of smoke. Not overpowering.
