First, I wanna thank you guys for steering me to Rest. Depot via KCBBQ membership. $3.99 vs $7 per lb is worth it right there.

I probably have finally figured out the answer to this on my own, but wanted to hear from the rest of you. When cooking a 13lb full-cut brisket, I have to cut her in half to fit in my smokette. Therefore, should I be considering this now twin 6lb briskets as it applies to anticipated cooking times per pound? I've found my times vary from 1.o to 1.5 hours per pound at 225. That's 6 to 9 hours on the low end as a 6 pounder. Would be 13 to 19 hours as a 13 pounder. Just trying to do some advance planning of the day....
