Can anyone tell me what a typical depreciation schedule would be for kitchen equipment? I'm thinking of a plan where I would install equipment in someone else's commercial kitchen as part of a contract to operate there... then if they want to buy me out during the contract, or at the end of the term, we would agree in advance what the equipment would be worth. TIA.

thats a toughie, woodburner. depreciation is relative to the type of equipment. some stuff is as good ten years later as the day it was put in to use. perhaps if you price out the equipment used, you can get an idea as to the value of each item down the road. or just simple use the IRS depreciation schedule for businesses. good luck.
The only thing I can help you with which might give you a hint of where to go with prices is just about anything that has any electronics is usaully about 50% of new. I have a CS 150 for sale, hopefully sold, and that is how I priced it because of the electronics. Not much more to wear out as well built as they are.
