Difficultly holding temps

I'm not sure what you mean. the Temp swing shouldn't have been enough to make that kind of difference.

have you done this before but this time it just didn't work?

17 isn't what I'd call "wide" is within normal range shouldn't have made a difference. that's less than a 10% variance. The problem is that it's not going to be able to hold the temp steady the lower you go. Keep in mind it cycles on and off, it's not designed to hold an exact temp. The electric elements aren't efficient at lower temps.

I'm running it today to doublt check. Set at 175 and it spends more time around 161-163 then 175 ....

I noticed that if the outside temp is below 10*, that the temp usually runs a little low so I usually set it a little bit hotter. Today it's 21* out and I've got a rack of beef short ribs on, I have it set at 235 and it's currently running at 236.
