Not sure which brine you're using. The purpose of the TQ is to prevent spoilage, a little, if it gets into the danger zone. Most brines don't have TQ in them anymore.
The key is if you kept it below 40, you'll be fine.
Now, did you build a 3 gallon brine, or just a one gallon and add two gallons of water. If so, 2 gallons of water is probably diluting it too much.
