I normally smoke a 6 pound rib for 3 hours 45 mins at 225, then turn down the heat to 140 and cook three more hours. I have to smoke a 12 pound rib tomorrow. Should I cook it longer than usual? How much longer?
Can't tell you how much longer but yes, it will take longer.
Now if it were me, I would cut the rib in half and then cook them. This way you get twice as many end cuts, which I find a lot of people like, and are better able to get a more consistent cook through both halves.
Over the past year I've cooked 5 or 6 prime ribs ranging from 8 to 16 pounds and they all seemed to take right at 5 hours. I start out at smoker temp of 250 until the meat temp gets to 115 then turn down smoker to 140 until internal meat temp of 135. So for me size hasn't mattered.
