Keep in mind, if you're going to be brining your bird for the 25, that you need to buy it at least 5 days before then, if not a little more. You'll need a minimum of 3 days to thaw (depending on size) and if you're brining 2 days like me, that's 5 days.

Oh, I also moved the Turkey forum higher on the page, as well as Prime Rib, because those are major forums during the holidays.

I wanted to do a smaller 10-11 lb bird, but the wife thought they were too small so I have had a 16 lb turkey sitting in my frig since Sunday thawing out.

Takes a LONG time to thaw when the frig temp is around 37 degrees. Plan to put into the Brine on Sunday afternoon/evening.

Need to check over the ingredients for Smokin's Holiday Brine to see what I have and what I need.
