so i am just going through my routine. i have 10 butts in front of me and am preparing to spice and rub them. already stoked the smoker. oh yea, i forgot to spray. yea, i spray the grill area with pam to ease the sticky mess afterwords. so im spraying and for no reason, i read the label. hmm, it says"spray on meats to help keep rubs and spices from falling off during cooking" or something to that effect. wow! what a great idea. so i sprayed those ten butts with pam. BIG MISTAKE! DONT TRY THIS! haha, well, it is costly to be an experimentalist. everything was fine for the first 7 hours. nothing unusual at all. but then..... i was in the other room working on an order, am my wife, while in the smoke room taking an order calls for me. loudly. she says 'mike, i think your smoker is overdoing it. maybe you should check it out'. when i got in the smoke room, i could barely see. the whole outside of the restaurant was barely visible. what the? i opened the smoker door.... all ten butts were a roaring inferno! what a waste. it took gallons of water to put out the fire. i was even glancing at the fire extinguisher and thinking...'your on deck..' just hope if any of you ever read that can, dont believe what you read......

I often spray my baked potatoes and chicken and cook them on the grill. Never had any thing to happen. I don't think Pam is starter fluid???? Sure it was Pam and not something else by mistake???? 7 hrs. is a long time for something to still be flammable. Looks like it would have went up as soon as it got hot. Someone could have got the bottle of "Yellow Rocket Fuel" to close.
i like that one, pine. ya made me laugh alot. i sure dont know that the pam was the source, but it was the only thing done different on that smoke. innocent, until proven guilty, i guess. pam, martha, all the same. anyway, i was suprised today when i pulled the first of the charred butts. first, of course, i had to remove the outer crust, which is no easy task. the inner meat was delicious. thank goodness, cause we were aweful busy and it would be a shame to 86 bbq at a bbq joint. maybe the ole girl is going through some kind of mentapause, or a bad case of heartburn. dont know for sure, but she cranked out 30 pounds of ribs today that were to die for.
