The issue is basically two things.

1. The unit will start to throw in more pellets because the temp is dropping (the door letting in more air) so it will jump the temp up when you close the door back

2. On higher temps, say cooking chicken, a sudden inflow of air, could create a larger fire in the pot

I'm new enough to mine that I still treat it like a stick burner when it comes to door opening. If I have to do anything to the meat, then I'll have everything ready close by. If it is going to take long, then I'll open the door and pull the whole rack out, and close the door. It recovers so fast that I'm still learning as I go too!!
