This recipe is from Ray Lampe aka Dr. BBQ from his cookbook DR. BBQ's Big-Time Barbecue Cookbook. Great cookbook BTW, you should get it.

1/2 cup salt
1/2 cup turbinado sugar
1/4 cup granulated brown sugar
1 tablespoon granulated garlic*
1 tablespoon granulated onion*
2 tablespoons paprika
2 tablespoons chili powder
2 tablespoons freshly ground black pepper
2 teaspoons cayenne pepper
1 tablespoon dried thyme
1 tablespoon ground cumin
1 teaspoon ground nutmeg

Combine all ingredients, mix well, store in an airtight container.

Yields 1 1/2 cups

* Granulated onion & garlic are coarser than powder, but the powders can be substituted.


Variations:

Sweeter Big-Time Barbecue Rub

Use the recipe above but substitute the following ingredients:

1/2 cup granulated brown sugar
1 1/2 tablespoons granulated onion
1 1/2 tablespoons dried thyme
also add 1 teaspoon cinnamon

Yields 1 3/4 cups


Spicy Big-Time Barbecue Rub

Use the recipe above but substitute the following ingredients:

1 1/2 tablespoons granulated garlic
3 tablespoons chili powder
1 1/2 tablespoons cayenne pepper

Yields 1 3/4 cups
