just spoke with Donna on the phone in the Cookshack Norman office--and she suggested I post this tip on the forum. I have found the grease drippings in the drip pan are easier to dispose of when they are allowed to cool overnight and perhaps even freeze for a short period of time. Earlier this week I smoked some chicken, let the drain pan set overnight under the Smokette. The next day the grease had stiffened, some of it was congealed, and I had room to place in the freezer for the day. I then took it out and it was thick enough to place in a plastic bag, tie up and throw in the garbage can. The drip pan had little grease left and I ran it through the dishwasher ready for my next smoking.

The last time I left the drippings to harden overnight, I forgot to go back & finish. Two days later they had eaten through the thin aluminum pan & made a mess.

Lately I've been putting a sheet of foil inside the drip pan. When I'm done, I pour the liquid into a plastic bag, throw in the foil & put the sealed bag into the trash. Instant cleanup.
